原料
大海螺--------2个
菠菜---------150克
调料
大蒜---------15克
精盐---------1小匙
陈醋---------适量
花椒油-------适量
植物油-------适量
制作步骤
1 菠菜去根和老叶,用清水浸泡并洗净,切成3厘米长的段,放入加有少许植物油、精盐的沸水中略焯,捞入冷水中冲凉,再捞出菠菜段挤干水分。
2 海螺刷洗干净,放入淡盐水中浸养12小时,取出,砸碎螺壳后取海螺肉,加入少许精盐,揉搓均匀去除黏液,换清水洗净,片成连刀片,放入沸水锅中焯烫一下,捞出沥水。
3 大蒜去除外皮,用清水洗净,放在容器内,加入少许清水捣烂成蓉。
4 海螺片和菠菜段放入容器中,再放入蒜蓉调拌均匀入味,加入陈醋、精盐,淋上烧热的花椒油拌匀,装盘上桌即可。
